I LOVE mint chocolate chip ice cream. So of course I had to try to make my own version of it. To be honest, it doesn't take anything like your typical mint chocolate chip. However, it does taste like mint and chocolate, just without all the sugar, food coloring and whatever other bad stuff is in your typical ice cream. And it taste good! I'm not kidding, just different....and I like different. I also like being able to eat sweet foods everyday without feeling guilty and this definitely falls in that category.
Ingredients:
- Bananas
- Peanut Butter
- Cocao Nibs
- Fresh Mint Leaves
- Dark Chocolate Bar
Directions:
- Cut up around four bananas and put them in the freezer until frozen.
- Once they're frozen, let them defrost for a couple minutes, but don't let them get too soft.
- Put about 1 1/2 cups of chopped frozen banana in the food processor with 1 tablespoon of peanut butter, 2 squares of dark chocolate, 2 mint leaves and a tablespoon of cocao nibs.
- Blend until the consistency of gelato.
