I hope everyone had an amazing New Year's weekend. Mine was great, I had so much fun!! It was so nice to have a couple days off, be with friends and let loose! Yesterday I had a relaxing day of hanging around the house watching a Mad Men marathon. Today was the real start of 2012 for me, and I kicked it off with some homemade fruit sorbet. One of my goals for the new year is to eat a lot more raw fruits and veggies. This sorbet is a very delicious way to get in your fruit servings for the day. It's completely healthy with no added sugar and is great to eat any time of the day...I often eat it for breakfast!
Ingredients:
- Frozen Fruit (I made mine with mangos, strawberries, blueberries and raspberries)
- Almond Milk
Directions:
- Put all the frozen fruit into the food processor at one time. If you're only making it for one person, you will need about half of what I have in the photos below which serves two.
- Chop up the fruit, so it's in small bits like the photo below.
- Then slowly drizzle in the almond milk as you blend the fruit in the food processor. You may need to stop and use a spoon to even out the fruit and then blend again. The finished result should be the consistency of a sorbet.
This sorbet is so easy to make and the sweetness of the fruits alone are delicious. I buy all my frozen fruit at Trader Joes because mostly everything is organic except for the mangos. Also, I recommend using mangos as a base for the sorbet because they have a great soft consistency. I also have a recipe for mango ice cream which is to die for. Enjoy!
